Summer's Bounty

After arriving back from Illinois, I was ready to start cooking using fresh summer produce.  The drought this spring and summer has caused so much damage.  Prices will or already are sky rocketing.


                    One of my favorite recipes comes from a friend of my Mom's.  It is called:
  
                                                           Food Packets from Susie.                                                                                                  Besides the recipe being very healthy, it is delicious.

                               This recipe incorporates many of the summer veggies producing now.

INGREDIENTS:

4 chicken quarters, separated
Lawry's seasoned salt
3 zucchini, sliced thinly
4 large tomatoes, cubed
1 large Vidalia onion, sliced thinly
2 green peppers, chopped
2 Tablespoons of fresh dill or 1 Tablespoon of dried dill weed
ground pepper, 1/2 teaspoon

Long grained rice, ( 3 Tablespoons uncooked rice for each packet)
Canola Oil

Assemble all of the vegetables in a large bowl.  Mix all herbs and spices into them.   I add about 2 Tablespoons of the seasoned salt.  The mixture should be fairly juicy from the tomatoes.


On a large sheet of heavy duty foil, place 1 T. oil in the center.  On top, place 3 Tablespoons of uncooked converted rice.  Next layer the thigh and leg over the rice.  Sprinkle generously with seasoned salt.  Then take 1/4 of your vegetable mixture and heap it on top.  Make sure to take some of the juice also.  Wrap tightly.  Place on a cookie sheet and bake for 1 hour and 20 at 375 degrees.  Don't skip using the cookie sheet because the packets will leak while cooking.

*May also be thrown on the grill. I cook them at least for an hour on medium.  After that, I know it sounds strange, but when I smell them, they are done.

*If you don't have heavy duty foil, use two sheets of regular foil layered together.


                              I think I might have to make up a batch of this right now.  Enjoy!
